STUFFED MUSHROOMS

Artichoke Dip

Cooking Time: 30 minutes
Serves 4-6

Ingredients

16-20 large white mushrooms
3-4 cloves garlic, pressed or finely minced
1/4 cup dried bread crumbs (or 1/2 cup fresh)
1/4 cup grated parmesan cheese
2-4 T olive oil
1 egg
Pepper to taste

Preparation

  1. Preheat oven to 400 degrees
  2. Remove stems from mushrooms. If you've got a melon baller, scoop out some of the mushroom's insides. Chop all mushroom bits finely.
  3. In medium bowl, combine all ingredients and blend well. Add more oil if mixture looks dry. Should look shiny.
  4. Lightly oil an oven proof-serving dish
  5. Use a spoon to stuff mushroom caps and place in oiled baking dish
  6. Bake for 30 minutes or until tops are browned and mushrooms are soft
  7. Serve warm or at room temperature
Note: to make bread crumbs simply tear up some slices of bread and whizz around in the blender until crummy.
